Southern Fried Catfish Recipe for Channel Catfish

Ingredients: Catfish fillets, corn meal, flour, paprika, salt, pepper, buttermilk, canola oil.
Directions: As promised, here is my recipe for catfish. First, add canola oil to your deep fryer and set it to 350 degrees. While waiting for the oil to heat up, begin preparing your catfish. Get two large bowls, one for the buttermilk, and one for the corn meal. To make your corn meal batter, add 1.5 cups of corn meal, 1.5 cups of flour, 2 tablespoons of paprika, then mix it up. Next, give your catfish fillets a sprinkle of salt and pepper, soak them in the buttermilk, then place them in your batter. Roll them around in the batter and give them a generous coating. Once the deep fryer is ready, place your catfish fillets into the fryer for 4 minutes. After 4 minutes, remove the catfish fillets from the deep fryer and place them on a paper towel to dry and cool for about 1 minute. Afterwards, place your fillets on a plate, sit down, and enjoy!
